Arriving at the Fairmont Grand Del Mar felt like stepping into a European villa tucked into the San Diego hills. The crown molding, dramatic chandelier, and floral arrangements in the lobby created a breathtaking first impression, and the sweeping view of the golf course sealed the feeling that I was somewhere extraordinary. I stayed three nights to celebrate my 30th birthday and wanted nothing less than a true five-star experience. With only two resorts in San Diego holding that distinction, choosing the Grand Del Mar felt like the perfect gift to myself.

The Rooms
I stayed in a guest room overlooking the adults-only pool, and it felt like the pool experience started the moment I opened my balcony doors. The marble bathroom, cloud-like bedding, and European-inspired design made it feel impossible to leave. On some mornings, I caught myself debating whether to lounge on the balcony or actually head down to the pool.

The resort’s suites add fireplaces, terraces, and living rooms that evoke the feeling of a Mediterranean villa. Though I didn’t stay in one this time, touring the property made it clear these suites are designed for guests who want to stretch out in comfort and style.

Addison
Dining at Addison was like stepping into a world-class performance. Chef William Bradley’s multi-course tasting menu was elegant and imaginative. Each plate arrived as a piece of art, pairing unexpected flavors that somehow made perfect sense together. The wine pairings were equally impressive, curated to elevate every dish. If you love fine dining, this experience is reason enough to stay at the resort.

Amaya Restaurant
For my birthday dinner, I chose Amaya, which quickly became one of my favorite memories of the trip. I ordered the steak tartare, roasted chicken, and finished with chocolate mousse. The flavors were so balanced and rich that I’m still thinking about that meal weeks later.
Cent’Anni Café
Breakfast pastries at Cent’Anni Café deserve their own spotlight. The chocolate croissant was flaky perfection, and I can still taste it. This café was my go-to stop for a quick but indulgent bite before heading out to explore the property.
Amaya Bar & Happy Hour
The Amaya Bar turned into my nightly ritual. Happy hour included oysters, burgers, and bartender’s choice cocktails that were dangerously good. I loved how the space had energy but also felt sophisticated.
In-Room Dining
On the morning of my birthday, I ordered in-room dining and it was one of my favorite moments of the entire trip. Eggs benedict, champagne, and chocolate-covered strawberries arrived beautifully arranged, and I enjoyed them from my balcony overlooking the adults-only pool. It was the perfect way to start my 30th birthday, and it made the celebration feel deeply personal.
Relaxation at the Spa and Beyond
The Spa at Fairmont Grand Del Mar
The spa here is Forbes Five-Star rated and consistently ranked among the best in the country. Even though I didn’t book a treatment this time, walking past the spa made me want to carve out time for a massage or facial. The relaxation lounges, serene atmosphere, and curated treatments make it a destination within a destination.
Poolside Bliss
The adults-only pool was my sanctuary. Attentive service, cocktails by the water, and the quiet of the canyon setting made it feel like the perfect escape. The family pool offered a different vibe with more activity, plus an additional smaller pool nearby for children.
Activities on the Grounds
Equestrian Center & Outdoor Adventures
One of the most unique features of the resort is its equestrian center. Guests can meet the horses and, depending on the season, arrange for rides or lessons. During my stay, I also discovered an archery area on the property. Although it was closed, it added to the sense that there is always something new to explore here.
Tennis, Trails, and More
Tennis courts, hiking trails, and wide-open grounds make it easy to stay active. I loved walking through the gardens and fountains, which felt designed for slow exploration. The variety of activities means you could easily stay here for days without ever leaving the property.
Golf at the Fairmont Grand Del Mar
The Grand Golf Club is a Tom Fazio–designed championship course and one of the most beautiful in Southern California. The course winds through the Los Peñasquitos Canyon Preserve, offering panoramic views and challenging play. Even though I didn’t get to golf, just seeing the manicured fairways and dramatic scenery put it on my bucket list. For golf lovers, this course is a destination in itself.
Favorite Spaces to Lounge
I found myself returning again and again to a few favorite spots:

- The lobby bar, with open doors that let in the coastal breeze.
- The hallway of seating outside Cent’Anni Café, bathed in natural light.
- The main lobby itself, which always offered stunning views of the golf course.
Each corner of the property had its own personality, yet all of them shared the same sense of luxury.
Service & Hospitality
The service at Fairmont Grand Del Mar was impeccable. Staff went out of their way to make my birthday feel special, from little surprises to remembering our favorite cocktails. It never felt forced, just thoughtful and genuine.
